Girl Onesie Mini Book

My brother-in-law's sister Julie is having a baby girl and I had to try my hand at making a baby onesie mini album for her. It took me a bit to get the rounded neck and leg openings to look just right, but I am ecstatic about the way things turned out.






I also made her a folded baby card with bookmark tags filled with nursery rhymes.





It was such a crowd pleaser that now I am working on making a few of the mini books and cards for our Etsy shop. I will definitely let everyone know when those get posted.

Recipe Friday: Key Lime Pie Poke Cake

A number of years ago, a friend made for me Key lime pie for my birthday and it became my number one favorite over cherry pie. There is nothing like the fresh tart flavors of the lime mixed with the sweet creaminess from the evaporated milk. All I can say is YUM!

When I found this recipe for Key lime pie poke cake, I knew it was something worth trying.

Key Lime Pie Poke Cake


Ingredients:

Cake
1 box white cake mix
1 ¼ cups water
1 tablespoon vegetable oil
4 eggs

Key Lime Filling

1 can (14 oz) sweetened condensed milk
¾ cup whipping cream
½ cup Key lime juice
1 teaspoon grated lime peel
4 drops yellow food coloring
1 drop green food coloring

Frosting

1 container vanilla frosting
2 teaspoons grated lime peel

Directions
  • Heat oven to 350°F for shiny metal or glass pan (or 325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour.
  • In large bowl, beat cake ingredients with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
  • Bake 26 to 30 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. With handle of wooden spoon (1/4 to 1/2 inch in diameter), poke holes almost to bottom of cake every 1/2 inch, wiping spoon handle occasionally to reduce sticking.
  • In medium bowl, stir together filling ingredients (mixture will thicken). Pour over cake; spread evenly over surface, working back and forth to fill holes. (Some filling should remain on top of cake.) Refrigerate 1 hour.
  • Spread frosting over cake; sprinkle with lime peel. Garnish with strawberries, lime slices and lemon leaves. Store loosely covered in refrigerator.
** If Key lime is not in season or you can't find it at your grocer, invest in real Key lime juice that can be found at places like Trader Joe's.

BESTeam Weekly Feature - You Are My Sunshine

When I first heard the name of this week's shop, I couldn't stop thinking and humming the song "you are my sunshine". Not surprisingly, Nina the Etsy shop owner of You Are My Sunshine named it for this very same nursery rhyme song. In her own words, she sets a beautiful setting....

When my sons were little, I would sing them to sleep with the nursery rhyme "You Are My Sunshine." Now that they are older, cuddles consist of discussions about anything and everything important to an eight and eleven year old.
Yet, as sleep overcomes them and their eyelashes finally fall onto their soft, smooth cheeks, their lips relax into innocent worry-less smiles and their ninja warrior/transformer gyrations settle into peaceful, lyrical sighs, I look at each one and still think, “yes, my love, you are my sunshine.”

Recipe Friday: Taco Soup

With spring cleaning in the near future including a pantry clean out, I decided to post a really easy and very yummy recipe using some of those pantry finds.

Easy Taco Soup


Ingredients:

1 lb lean ground beef or turkey
1 cup chopped onions
1 package (1.25 ounce) taco seasoning mix
3 cups hot water
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes
1 (15 ounce) can black beans or kidney beans, drained and rinsed
1 (15 ounce) can whole kernel corn
1 (4 ounce) can diced green chilies
1 cup small shells pasta

Directions:

  • In a large saucepan or Dutch oven, cook ground meat and onions until no longer pink; drain.
  • Add remaining ingredients to pan.
  • Bring to a boil, reduce heat, and simmer until pasta is cooked (about 10 minutes).
  • Remove from heat.
  • Ladle soup into serving bowls.
  • Top with shredded cheese, crushed tortilla chips, sliced green onions, or sour cream if desired.
  • Makes approximately 6 servings
